Mexican Egg Scramble

1 egg plus ½ cup egg substitute

¼ cup black beans, rinsed and drained

¼ cup prepared pico de gallo or chopped tomato and onion

Spray a medium skillet with non-stick cooking spray.  Add eggs and egg substitute.  Scramble with black beans.  Cook until eggs are tender and black beans are warmed.  Add pico de gallo or chopped tomato and onion over top.  (You can also substitute salsa if needed!)
