Mini Turkey Meatloaves
  • 1 medium onion chopped onion
  • 1/3 cup whole wheat breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried oregano
  • ½ teaspoon fresh ground pepper
  •  1 pound 93% lean ground turkey breast
  • 1 large egg white (or equivalent of egg substitute)
  • ¼ cup plus 2 tablespoons ketchup
  • ½ teaspoon Tabasco

Preheat oven to 350˚F. Spray a medium skillet with non-stick cooking spray and heat over medium-high heat. Add onions and  sautee for 5 minutes until lightly browned; allow to cool.

Combine 2 tablespoons ketchup with ½ teaspoon Tabasco.  Brush over meatloaf tops. 

Bake for 30 minutes or until thermometer registers 165˚F internal temperature.

Makes 6 mini loaves at 142 calories each.
