Layered Antipasto Salad
  • 1 medium cucumber, peeled, thinly sliced
  • 1-pint Roma tomatoes, quartered
  • (4 ounces) light Italian dressing
  • 4 cups torn romaine lettuce
  • 1 cup diced low sodium ham
  • 1 (14 ounce) can artichoke hearts, drained, diced
  • 4 ounces block mozzarella, cut in cubes
  • 1 cup sliced fresh mushrooms

Layer cucumbers, tomatoes in a clear salad. Pour ΒΌ cup dressing over layers.

Top with lettuce, half of ham, artichoke hearts, half of cheese cubes, mushrooms, remaining ham and cheese strips.

Pour remaining dressing over salad; chill.
