Black Bean and Chicken Tacos

Recipe makes 2 tacos

  • 1 chicken breast
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • 2 tortillas (whole wheat, corn, or low carb/high fiber choices)
  • 1 cup black beans, rinsed and drained
  • 2 tablespoons green onions
  • ½ cup shredded romaine or leafy green lettuce
  • ¼ cup 2% shredded cheese
  • ¼ cup salsa

Sprinkle chicken breast with chili powder and garlic powder.  Cook over medium heat until down.  Chop or shred chicken.

Wrap tortillas in a paper towel.  Microwave for 20 seconds until warmed.  You can also grill them in the cleaned skillet until toasty and warm.

Place shredded chicken on tortillas.  Layer with beans, green onions, lettuce, cheese and salsa.  WRAP and EAT!
